This can be a very delicate subject to approach but it is a reality of eating meat and farming pigs that we have to accept.  Far too often the 'slaughter' of pigs is used as a tool to evoke emotional responses in people that are confronted with the inevitable end for animals that produce meat for their table.

This video is produced by Temple Grandin, the world's most respected expert on animal welfare and demonstrates how an abattoir should be run.  It would be nice to know that all Australian abattiors followed the same standards.
